The cooks as well as the eaters show a unique
preference for salty and sour flavors. The sources of these flavors go
beyond the salt and vinegar preference. Sinigang is a boiled fish and

presence of Philippines ethnic cuisine.
Manila cuisine includes several unripe fruits such
as mango, guava and tamarind as it has sour taste. The tiny kalamansi
